Blueberry Cobbler with Gookie Dough Crust Recipe
Today’s recipe co-star will be blueberries.
Some say Blueberry Cobbler with Gookie Dough Crust is a match made in heaven and couldn’t agree more!
Scoops of gooey, egg-free Gookie Dough are placed over the juicy blueberry filling to create an amazing golden cookie crust!
You can make it with both fresh or frozen blueberries.
P.S. Did you know that the pigment that gives blueberries their distinctive colour (called anthocyanin) is the same compound that provides the blueberry's amazing health benefits?
You will need:
For Cookie Dough Crust:
For Fruit Filling:
- 800g fresh or 700g of frozen blueberries
- 2-3 tsp corn flour (depending on how juicy you like it)
- 100g sugar
- 1/2 tsp ground cinnamon
- 1 tsp vanilla extract
- 1 tsp lemon juice
To prepare blueberry filling, combine all ingredients in a bowl to use in the cobbler recipe.
Preheat the oven to 190 degrees Celsius.
Place fruit mixture into an 8-inch square baking pan or 9-inch round deep-dish pie plate. Drop Gookie Dough topping evenly over the fruit mixture.
Bake until golden brown (45-55 minutes). Place a piece of tin foil over the cobbler if Gookie Dough gets too brown before it's finished baking.
Serve warm—pairs well with vanilla ice cream or whipped cream.
