Chocolate Brownie Gookie Dough Cake

Today, it’s time for chocolate brownie Gookie Dough cake.

A rich, fudgy chocolate cake filled with cookie dough and covered in a dreamy chocolate frosting. 

This decadent cake is made with layers of fudgy chocolate cake, our gooey Edible Gookie Dough and frosted with a luscious chocolate buttercream.

It’s one of those more challenging recipes, but... oh, boy—it’s well worth the effort! 


You will need: 

For The Chocolate Cake:

  • 350g sugar
  • 90g dark cocoa powder
  • 250g flour
  • 1 ½  tsp bicarb soda
  • 2 tsp baking powder
  • 1 tsp salt
  • 160ml vegetable oil
  • 2 tsp vanilla extract
  • 3 large eggs
  • 240ml buttermilk
  • 120ml strongly brewed coffee

For The Cookie Dough Filling:

For The Chocolate Frosting:

  • 110g unsalted butter (room temperature)
  • 190g icing sugar 
  • 120g unsweetened cocoa powder
  • 1–3 tbsp milk
  • ¼ tsp salt
  • 1tsp vanilla extract
  • ¼ tsp espresso powder

For The Cake:

Preheat the oven to 170 degrees Celsius. Grease and line three 6-inch cake pans OR two 8-inch cake pans with greaseproof paper.

In a large bowl, whisk together the sugar, cocoa powder, flour, bicarb soda, baking powder and salt. In a separate bowl, whisk oil, vanilla, eggs and buttermilk.

Pour the wet ingredients into the dry, whisking until no lumps remain. Pour in brewed coffee, mixing until just combined.

Pour batter into prepared pans and bake for roughly 30 minutes, or until a knife inserted in the centre of the cake comes out clean. Cool completely on a wire rack before frosting.

Make Frosting And Assemble:

While the cakes cool, make the chocolate buttercream. Place the room temperature butter in a stand mixer fitted with the whisk attachment. Beat the butter until creamy. Scrape down the bowl and add the cocoa powder. Beat on low speed and gradually increase to high speed until homogeneous.

Scrape down the bowl and add the icing sugar, vanilla extract, espresso powder and 3 tbsp of milk to start. Beat on low speed and gradually increase to high speed until light and fluffy.

If the frosting feels too stiff, add more milk (one tablespoon at a time). If it feels too liquidy, add in one tbsp of icing sugar at a time until frosting reaches its desired consistency.

Frost the cake by placing the first cake layer onto a cake stand. Top with about ⅓  of the Gookie Dough, patting it into an even layer. Repeat with the second layer and another ⅓  of the Gookie Dough. Firmly press the third cake on top of the Gookie Dough layer.

Frost the top and sides of the cake with the chocolate buttercream, using an offset spatula to smooth out the sides of the cake. If desired, roll the remaining Gookie Dough into little Gookie Dough truffles and decorate the top of the cake. If not, you can always just save the remaining Gookie Dough for snacking on later!
