Cookie Dough Custard Doughnuts

Sit down, grab a coffee and your favourite magazine because it's doughnut time. Not only are these doughnuts super Instagram-worthy but they're gorgeously calorific and entirely worth every guilty second. Who cares if you're gonna be on the treadmill all next week. These chocolate chip Gookie Dough custard doughnuts are the recipe you need, and you won't be able to find these delights in Krispy Kreme so move over, there's a new treat in town.

You will need: 

(Makes 15 doughnuts) 

For the custard

115g of brown sugar 

1/2 teaspoon of salt 

Two tablespoons of cornstarch 

250ml of milk 

120ml of heavy cream

One tablespoon of butter

One teaspoon of vanilla 

45g of mini chocolate chips 

For the doughnuts 

250ml milk 

Two tablespoons of sugar 

One envelop of active dry yeast

450g of flour 

One teaspoon of salt 

Two teaspoons of butter (melted)

Two medium eggs (beaten) 

Oil for frying and Nutella and Gookie Dough for frosting

Firstly, the custard. Whisk together your sugar, salt and cornstarch and then stir in the milk and cream. Bring it to a boil over medium heat and stir constantly. After about 5 minutes, reduce the heat and allow it to thicken. You'll know the custard is ready because it will coat the back of a wooden spoon. Once this happens, stir in the butter and vanilla. Cover and chill until ready to use (at least 30 minutes). Remember, the custard will thicken as it cools. Stir in the chocolate chips when you're ready to fill the doughnuts. 

For the doughnuts, you need to heat the milk and sugar to 120 degrees. Whisk together the yeast about 255g of the flour and the salt. Once this has been mixed in slightly, add the wet ingredients (milk, butter and eggs). Add enough remaining flour to keep the dough from becoming too sticky. Knead until you have a smooth ball and cover to let it rise so it almost doubles, this will take around an hour. 

Once risen, roll the dough to 1/2 an inch thickness and cut using a two-inch round cookie cutter. Stretch each circle to around 2 and a half inches and place one teaspoon of custard in the centre (WITH THE CHOCOLATE CHIPS ADDED). Take a small ball of Gookie Dough and pop it in the centre also. Now top with another round. 

Firmly press the edges together and cover the doughnuts so they can raise some more. Heat your oil to about 375 degrees, once the oil is ready, fry the doughnuts ni more than twice. Drain on kitchen roll and once cooled, frost. Cover with a generous amount of Nutella and be generous with your Gookie Dough. Treat yourself; it's the weekend!
