Gookie Dough Tiramisu

Hello, Italy! Everyone loves Italian and in my opinion, it is one of the best cuisines out there. Pizza, pasta, Pana cotta and tiramisu, of course, it's delicious. So, this hump day, we're taking Gookie Dough and adding an Italian twist. This is cookie dough tiramisu.

Ingredients

(For the cookie dough) 

One monster tub of Gookie Dough in original flavour 

(For the mascarpone cream) 

4 large eggs which are separated 

200g of granulated sugar 

200g of mascarpone cheese 

115g of heavy whipping cream 

(For the assembly) 

12-16 ladyfinger cookies 

250ml of cold coffee for dipping 

Shaved chocolate and mini chocolate chips for garnish

Firstly, take the Gookie Dough out of the fridge and leave on the side for a couple of hours to soften. This way it will be easier to work with, pop it in a bowl and leave aside. 

For the mascarpone cream 

To the bowl of a mixer, add egg yolks and half of the granulated sugar and mix on high until it is pale yellow and thick. Add in the mascarpone and continue blending. Remove the mascarpone mixture from the mixer and add to a separate bowl and pop aside. Now, in a clean bowl, add egg whites to the mixer and beat until foamy. Slowly add in half of the remaining sugar and beat until stiff peaks form. Remove the meringue from the mixer and add to a separate bowl and set aside. Lastly, add whipping cream to a clean bowl. On high, mix in the remaining sugar until whipped cream with stiff peaks has formed. Fold whipped cream into mascarpone mixture then fold in the meringue and set the final cream mixture to the side. 

Assembly 

Carefully dip both sides of the ladyfinger biscuits into coffee and place at the bottom of an 8x10 tray until the bottom is fully covered. now, spread a layer of the Gookie Dough on top of the ladyfingers. Then spread a layer of mascarpone cream on top of the cookie dough. Repeat layers again, starting with the ladyfingers and ending with the mascarpone cream on top. Top with chocolate. Cover and pop in the fridge for at least 5 hours and then serve. *Recipe adapted from grandbaby-cakes.com*
