Crispy Chocolate Fridge Cake

Packed with biscuits, sultanas, Gookie Dough, puffed rice and of course, chocolate! This fridge cake is perfect for snacking and celebrating Easter.

You will need: 

300g of dark chocolate which is broken into generous chunks 

100g of butter, diced

140g of golden syrup

One teaspoon of vanilla extract 

200g of biscuits (Digestives) 

One mini tub of Gookie Dough in funfetti cake batter 

100g of sultanas 

85g of Rice Krispies 

100-140g mini eggs

50g of white chocolate (melted)

Line a 20 x 30cm tin with parchment paper. Melt the chocolate, butter and golden syrup in a bowl and set over a pan of simmering water, occasionally stirring until smooth. Add the vanilla, biscuits, sultanas, Gookie Dough (in broken up pieces) and Rice Krispies. Mix well until everything is fully coated. 

Now, tip the mixture into the tin and flatten down with the back of a spoon. Press in the mini eggs and put in the fridge until it is set. When hard, drizzle with the melted white chocolate and set again until cutting into pieces.

No baking involved, super simple and extra delicious. I guess it will be classed as healthy if it has sultanas in it? Well, we can at least make ourselves believe it is.
