Raw Chocolate Chip Cookie Dough with Hot Fudge

It's time to get you through Hump Day with these gorgeous cookie bars with are slathered with hot fudge goodness. All of that gooey oozing mouthwatering, sticky sweet sauce with crunchy yet crumbly safe to eat cookie bars. Perfection! 

You will need: 

(Cookie)

One monster tub of Gookie Dough 

One tablespoon of vanilla extract 

 

260g of chocolate chips (reserve two tablespoons) and 75g of peanut butter or white chocolate chips 

(Hot Fudge)

150ml of heavy cream

170g of light corn syrup 

50g of brown sugar 

25g of cocoa powder 

1/4 teaspoon of salt 

2 tablespoons of unsalted butter

2 teaspoons of vanilla extract 

150g of dark or bittersweet chocolate which is finely chopped 

Directions of the cookies 

Firstly, line an 8 by 8-inch baking tin with foil and spray with cooking spray. Then in a large mixing bowl, whisk together the Gookie Dough and vanilla until soft and fluffy. Now stir in the chocolate chips and peanut butter chips, reserving two tablespoons of chocolate chips to push into the dough afterwards. 

Turn the dough out into the prepared tin and press down firmly with a spatula, ensure that it is even and press in the saved chocolate chips. Place the tin in the fridge for at least two hours and after, leave at room temperature for ten minutes to slice at the desired size. Now it's time for the fudge! These bars are best kept in an airtight container in a fridge for at least three weeks but last in the freezer for four months. 

Directions for the hot fudge 

Bring the cream, corn syrup, brown sugar, cocoa powder, salt and chopped chocolate to a boil over moderate heat. Ensure you stir until all of the chocolate is melted. Then reduce the heat and cook on low for five minutes, stirring constantly. Now turn off the heat and add the butter, vanilla and remaining chocolate and mix until it is smooth. Cool slightly before serving as it will be very hot. The cooled sauce can be stored in a jar with a lid or in an airtight container in the fridge. It's safe to reheat the sauce, and you can do this by heating for 10-15 seconds in the microwave.
