Cream Egg Gookie Cups Recipe

We may be a bit behind considering we're discussing cream eggs but we aren't bothered because they should be enjoyed all year round! But then we thought, why not enjoy the classic cream egg with Gookie Dough? And boom, the cream egg Gookie cups were born.

You will need: 

A tub of original Gookie Dough 

170g of light corn syrup 

60g of salted butter softened 

One teaspoon of vanilla extract 

375g of icing sugar 

Yellow food colouring 

Directions 

Take your Gookie Dough and spray each muffin pan with nonstick spray and add three tablespoons of the dough to each muffin compartment. Make sure you press down so it makes the imprint of a cup shape. Bake at 180 degrees for 10-15 minutes or until golden and then let them cool down for 15 minutes in the pan. The middle will begin to sink. While the cookies are warm, use the tips of your fingers to gently twist the cookie cups out of the pan and then let them cool completely. 

In the bowl of the mixer combine your corn syrup, butter and vanilla until smooth. Slowly add the powdered sugar and mix until fully incorporated. 

Remove about 1/4 of the mixture and dye it with yellow food colouring. Pour the white cream into the cookie cups and finish off by dropping a small blob of yellow cream (your yolk). 

Just a side note, if the filling becomes too firm, you can warm it up in the microwave to make the mixture pourable again! 

Sickly sweet and hits all those taste buds in the right places. Pure bliss! If you're not a cream egg fan then you could always add normal icing or an alternative would be white chocolate melted with a yellow smartie. *Inspiration from In Katrina's Kitchen*
