Iced Tea Cookies

We're in the middle of a heatwave and if you have the luxury of being outdoors and away from the office, then we're very jealous! However, you can still have the taste of summer with these gorgeous iced tea cookies which are certainly going down a treat. With a preparation time of ten minutes and the cooking time at fifteen minutes maximum, they're super-duper easy! Find out how to make them here...

You will need: 

285g of butter 

200g of brown sugar 

Six or seven tablespoons of your favourite instant iced tea 

One egg yolk 

Two teaspoons of vanilla extract 

290g of all all-purpose flour 

(For the glaze)

125g of icing sugar 

Five teaspoons of hot water or milk 

1/4 teaspoon of vanilla extract

Directions 

Firstly, preheat your oven to 180 degrees Celcius. Beat the butter and sugar in a large bowl with an electric mixer. Combine until it becomes light and fluffy. Then beat in your iced tea, egg yolk and vanilla extract. Gradually sift the flour into the bowl and stir. Drop by heaping teaspoon two inches apart onto baking trays.

Bake the cookies for 12-15 minutes or until lightly golden/brown. To make the glaze, combine all the ingredients and leave to sit a while to allow it to thicken before decorating the cookies.
