Cookie Dough Baklava

The classic Baklava. A rich, sweet pastry dessert which is sweetened and held together with syrup and honey. And as if that isn't tasty enough on its own. Yes, you guessed it, we've added a splash of cookie dough into the mix to give you that oozing melting chocolatey doughy flavour that you desire.

You will need: 

(FOR THE PASTRY)

One package of Jus-Roll pastry/dough which is thawed 

115g of butter 

(FOR THE FILLING) 

One monster tub of Gookie Dough in original 

(FOR THE VANILLA AND BROWN SUGAR SYRUP) 

235ml of water 

300g of brown sugar 

Two tablespoons of vanilla extract

Preheat the oven to 180 degrees Celsius and grease a 13x9 inch pan with cooking spray and set aside. Meanwhile, grab the Gookie Dough and pop it in a bowl and spread it out so it softens and becomes easier to work with. 

Begin layering your dough in the pan and place one sheet of the roll in the bottom and brush it with melted butter and repeat the process until around 10 pieces of flaked pastry are on top of each other.  

Press half of the Gookie Dough on top of the last pastry layer. Do this by taking chunks of Gookie Dough and flattening it in your hand to prevent the sheets from tearing. Now add ten more sheets of buttered pastry and top with the remaining Gookie Dough. Lastly, add the remaining pastry sheets buttering each sheet as you layer and cut the baklava with a sharp knife in a square pattern. 

To make the syrup drizzle, bring the water, brown sugar and vanilla extract to the boil in a small saucepan and simmer for around 10 minutes. Remove from the heat and use instantly. 

Bake for 45 minutes or until golden-brown. Remove from the oven and straight away, pour the vanilla and brown sugar syrup on top. Allow setting for at least six hours.
