Mini Gookie Dough Pies

BBQ? Summer party? What better way to serve desserts than the use of minis. These mini Gookie Dough pies are not only adorable but also sensational which will wow all of your guests during your hosting.

You will need: 

A monster tub of Gookie Dough in a flavour of your choice 

115g of unsalted butter at room temperature 

100g of granulated sugar 

1/4 teaspoon of kosher salt 

90g of semi-sweet baking chocolate which is melted and cooled 

One teaspoon of pure vanilla extract 

Two large pasteurised eggs at room temperature 

Whipped cream for serving 

Chocolate shavings for serving

Firstly, you need to prepare the crust. Place a rack in the centre of the oven and preheat the oven to 170 degrees. Grease a 24-cup mini muffin tin and divide your Gookie Dough into 24 pieces and roll each piece into a ball. Place the dough in the prepared muffin cups. Bake for around 10 minutes or until deep golden brown. Remove them from the oven and use the bottom of a shot glass to make an impression in each cup. Let cool for 10 minutes and then with a butter knife, remove each cup from the tin and transfer to a rack to cool properly. 

In a large bowl, cream the butter until smooth and beat in the sugar, continue to beat until the mixture is light and fluffy. Then add the salt and once the chocolate is completely cooled, beat in the chocolate with the vanilla extract. Add the eggs one at a time beating for a full five minutes on a high speed after each addition. Please don't rush this section. 

Spoon the filling into each of the cooled cookie cups and pop into the fridge to set. Then serve with whipped cream and chocolate shavings. *Recipe credit to wellplated.com* 

The extra bursts of chocolate from the chocolate chips will make every bite a delight and you'll be dying to eat more and more. The desk drawer may be a perfect place for these, however, they wouldn't last very long!
